Pumpkin Chia Pudding

Ingredients:

  • 1/2 cup pumpkin purée (canned or homemade)

  • 2 tbsp maple syrup (or honey if not vegan)

  • 1/2 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • 1 cup unsweetened almond milk

  • 1/4 cup chia seeds

    • Optional Toppings:

  • Granola (gluten-free if needed)

  • Coconut whipped cream

  • Crushed pecans or walnuts

  • Pumpkin seeds

  • Dash of cinnamon or nutmeg

Instructions:

  1. Mix the Base:
    In a medium bowl or jar, whisk together pumpkin purée, maple syrup, pumpkin pie spice, vanilla, and almond milk until smooth.

  2. Add Chia Seeds:
    Stir in chia seeds until evenly combined. Let sit for 5 minutes, then stir again to prevent clumping.

  3. Chill:
    Cover and refrigerate for at least 4 hours or overnight. It will thicken into a pudding-like texture.

  4. Serve & Style:
    Layer into mason jars or small glasses. Top with granola, coconut whip, and a sprinkle of cinnamon or seeds for that autumnal look.
