Ingredients:

3 ripe pears, peeled, cored, and diced

2 tablespoons maple syrup (or honey)

1 tablespoon lemon juice

½ teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

⅛ teaspoon ground ginger

Pinch of salt

2 tablespoons water

Optional: 1 teaspoon vanilla extract or a small cinnamon stick
Instructions:

In a medium saucepan over medium heat, combine the diced pears, maple syrup, lemon juice, cinnamon, nutmeg, ginger, salt, and water.

Stir gently to coat the pears with the spices.

Bring the mixture to a gentle simmer. Reduce heat to low and cook uncovered for 10–15 minutes, stirring occasionally, until the pears are soft and the mixture thickens slightly.

If using, stir in vanilla extract during the last minute of cooking.

Serve warm, or let cool and store in the fridge for up to 5 days.
