Banana Oat Cookies

Ingredients:

  • 2 large ripe bananas, mashed

  • 1 cup rolled oats

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 tablespoons nut butter (like almond or peanut butter)

  • ¼ cup chopped walnuts or dark chocolate chips (optional)

  • 2 tablespoons ground flaxseed or chia seeds (optional for extra fiber)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

  2. In a medium bowl, mash the bananas until smooth.

  3. Add the oats, cinnamon, salt, vanilla, and nut butter. Stir until well combined.

  4. Fold in any optional add-ins like walnuts, chocolate chips, flaxseed, or chia seeds.

  5. Scoop tablespoons of the mixture onto the baking sheet and flatten slightly with the back of a spoon.

  6. Bake for 12–15 minutes, or until the edges are lightly golden and the cookies are set.

  7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Yields: About 10–12 cookies
