Pomegranate & Arugula Salad with Goat Cheese

Ingredients:

  • 4 cups arugula or mixed greens
  • 1/2 cup pomegranate seeds
  • 1/4 cup walnuts, toasted
  • 1/4 cup goat cheese, crumbled
  • Dressing: 2 tbsp olive oil, 1 tbsp balsamic vinegar, salt and pepper to taste

Instructions:

  1. In a large salad bowl, layer arugula, pomegranate seeds, walnuts, and goat cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper, then drizzle over the salad.
  3. Toss lightly and serve as a festive, gout-friendly side dish that’s full of holiday colors.
