Cucumber & Avocado Gazpacho

Cucumber & Avocado Gazpacho

Ingredients:

  • 2 large cucumbers, peeled and chopped

  • 1 ripe avocado

  • ¼ cup plain Greek yogurt

  • 1 small garlic clove

  • Juice of 1 lime

  • 1 tbsp olive oil

  • Handful of fresh basil or mint

  • Salt + pepper to taste

  • Optional: splash of water for desired consistency

Instructions:

  1. Add all ingredients to a blender and blend until smooth.

  2. Taste and adjust seasoning.

  3. Chill for 1–2 hours before serving.

  4. Garnish with cucumber ribbons, microgreens, or a swirl of yogurt.
