Ingredients:

3 cups cubed seedless watermelon
 - 
½ cucumber, peeled and chopped
 - 
¼ small red onion
 - 
Juice of 1 lime
 - 
2 tbsp chopped fresh mint
 - 
1 tbsp olive oil
 - 
Pinch of salt + optional pinch of cayenne for kick
 
Instructions:

Blend all ingredients until smooth.
 - 
Chill for at least 30 minutes.
 - 
Serve in small bowls or glasses, garnished with mint and a drizzle of olive oil.
