Chilled Watermelon Gazpacho with Mint & Lime

Ingredients:

  • 3 cups cubed seedless watermelon

  • ½ cucumber, peeled and chopped

  • ¼ small red onion

  • Juice of 1 lime

  • 2 tbsp chopped fresh mint

  • 1 tbsp olive oil

  • Pinch of salt + optional pinch of cayenne for kick


Instructions:

  1. Blend all ingredients until smooth.

  2. Chill for at least 30 minutes.

  3. Serve in small bowls or glasses, garnished with mint and a drizzle of olive oil.
