Zucchini Noodles with Lemon Basil Pasta

Ingredients:

  • 4 medium zucchinis
  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 2 cloves garlic
  • Zest and juice of 1 lemon
  • 1/2 cup olive oil
  • Salt and pepper to taste 

Instructions:

  1. Use a spiralizer to turn the zucchinis into noodles. Set aside.
  2. In a food processor, blend basil leaves, Parmesan, pine nuts, garlic, lemon zest, and lemon juice.
  3. Gradually pour in olive oil while the processor is running until the mixture is smooth.
  4. Season with salt and pepper to taste.
  5. Toss the zucchini noodles with the pesto until well coated.
  6. Serve immediately, garnished with extra Parmesan cheese if desired.
