Ingredients:
- 1 cup cooked quinoa
- 1/2 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions:
- In a large bowl, combine quinoa, cucumber, cherry tomatoes, bell pepper, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Let sit for 10 minutes to absorb flavors before serving.
