Lemon Herb Quinoa Salad

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper


Instructions:

  1. In a large bowl, combine quinoa, cucumber, cherry tomatoes, bell pepper, parsley, and mint.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour dressing over salad and toss to combine.
  4. Let sit for 10 minutes to absorb flavors before serving.
