Mediterranean Chickpea Salad

Ingredients:

  • 1 can chickpeas, drained and rinsed

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, finely chopped

  • ¼ cup fresh parsley, chopped

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • ¼ cup feta cheese (optional)

Instructions:

  1. In a large bowl, mix chickpeas, cucumber, tomatoes, red onion, and parsley.

  2. Drizzle with olive oil and lemon juice. Toss well.

  3. Add feta cheese (if using) and serve chilled.
