
Ingredients:

1 can chickpeas, drained and rinsed

1 cucumber, diced

1 cup cherry tomatoes, halved

¼ red onion, finely chopped

¼ cup fresh parsley, chopped

2 tbsp olive oil

1 tbsp lemon juice

¼ cup feta cheese (optional)
Instructions:

In a large bowl, mix chickpeas, cucumber, tomatoes, red onion, and parsley.

Drizzle with olive oil and lemon juice. Toss well.

Add feta cheese (if using) and serve chilled.
