Grilled Chicken with Mango Avocado Salsa

Ingredients:

  • 4 chicken breasts
  • Salt and pepper
  • 2 ripe mangoes, diced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Brush them lightly with olive oil.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F.
  5. In a bowl, combine diced mangoes, avocado, red onion, and cilantro.
  6. Add lime juice and a pinch of salt, and mix gently to combine.
  7. Slice the grilled chicken and serve topped with a generous scoop of mango avocado salsa.
