Ingredients:
- 4 ripe peaches, halved and pitted
- 6 cups arugula
- 1/2 cup crumbled goat cheese
- 11/4 cup toasted pecans

Instructions:
- Grill the Peaches. Preheat your grill to medium-high heat, and lightly brush the peach halves with olive oil. Place the peach halves on the grill, cut side down, and grill for about 3-4 minutes, until they have nice grill marks. Flip and grill for an additional 2 minutes. Remove from the grill and let cool slightly, then slice the peaches into wedges.
- Prepare the dressing. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, honey, salt, and pepper.
- Assemble the salad. rIn a large salad bowl, combine arugula, grilled peach slices, crumbled goat cheese, toasted pecans, and thinly sliced red onion.
- Dress the Salad. Drizzle the dressing over the salad and toss gently to combine.
- Serve. Serve immediately and enjoy the fresh, summer flavors.
