Grilled Peach and Arugula Salad

Ingredients:

  • 4 ripe peaches, halved and pitted
  • 6 cups arugula
  • 1/2 cup crumbled goat cheese
  • 11/4 cup toasted pecans
  • 1/4 red onion, thinly sliced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions:

  1. Grill the Peaches. Preheat your grill to medium-high heat, and lightly brush the peach halves with olive oil. Place the peach halves on the grill, cut side down, and grill for about 3-4 minutes, until they have nice grill marks. Flip and grill for an additional 2 minutes. Remove from the grill and let cool slightly, then slice the peaches into wedges.
  2. Prepare the dressing. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, honey, salt, and pepper.
  3. Assemble the salad. rIn a large salad bowl, combine arugula, grilled peach slices, crumbled goat cheese, toasted pecans, and thinly sliced red onion.
  4. Dress the Salad. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve. Serve immediately and enjoy the fresh, summer flavors.

Tips:

  • Variations: You can substitute the goat cheese with feta or blue cheese if you prefer.
  • Nuts: Swap pecans for walnuts or almonds for a different crunch.
  • Add Protein: Add grilled chicken or shrimp for a heartier salad.
