Loaded Sweet Potato Nachos

Ingredients:

  • 2 large sweet potatoes, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Toppings: 

  • ½ cup black beans (cooked and rinsed)
  • ½ cup fresh salsa or diced tomatoes
  • ¼ cup diced red onion
  • ½ cup shredded sharp cheddar cheese (optional or use plant-based cheese for dairy-free)
  • 1 ripe avocado, diced
  • 2 tablespoons fresh cilantro, chopped
  • Lime wedges for serving

Instructions: 

  1. Prep the Sweet Potatoes
    1. Preheat the oven to 400°F (200°C).
    2. Toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Bake the Sweet Potatoes
    1. Arrange slices on a baking sheet in a single layer.
    2. Bake for 20 minutes, flip, and bake for an additional 10-15 minutes until crispy.
  3. Assemble the Nachos
    1. Layer baked sweet potato rounds on a serving platter.
    2. Top with black beans, fresh salsa, red onion, and shredded cheese (if using).
  4. Melt the Cheese
    1. If using cheese, place the loaded sweet potato nachos back in the oven for 5 minutes until the cheese melts.
  5. Add Fresh Toppings
    1. Top with diced avocado, fresh cilantro, and a squeeze of lime juice.
  6. Serve & Enjoy
    1. Serve immediately as a healthy, gout-friendly Super Bowl snack!
